Slow Cooker Vegan Sag Paneer (Tofu with Spinach) from Everyday Maven

A vegan version of Sag Paneer using tofu instead of Paneer, and it sounds delicious!

Sag Paneer is a classic Indian dish that combines spinach and Paneer cheese, and this Slow Cooker Vegan Sag Paneer from Everyday Maven has all the flavors that make this such a well-loved dish, but it's made with tofu and coconut milk for a vegan version of Sag Paneer.  There's a lot of dark leafy greens nutrition in this recipe due to the use of both frozen and fresh spinach, and I'd say this sounds like a great Meatless Monday dish for the slow cooker.
