I know some of you never think about using the slow cooker for a side dish, but once you try it you'll realize how convenient it is to have a side dish cooking unattended while you focus on the main part of the meal.  This Spicy Slow Cooker Rice with Green Chiles, Green Onions, and Cheese is one of my personal favorite slow cooker side dishes, and my sister Val tried out the recipe and reported it was a hit with her family as well.  I highly recommend cooking extra rice just so you have some leftover rice to try this recipe!

When I first bought a rice cooker, many people told me not to bother trying to cook rice in it. I can't imagine why not, especially with great recipes like this one.
