CrockPot Chicken Burrito Bowls with Avocado Cream Sauce from 365 Days of Slow Cooking

Over the weekend I officially announced Slow Cooker Summer Dinners, the new category where I'm collecting CrockPot recipes for summer dinners you can cook without heating up the house.  It's a little bit subjective as to what makes a "summer dinner" but I don't think there's any doubt that these CrockPot Chicken Burrito Bowls with Avocado Cream Sauce from 365 Days of Slow Cooking would qualify.  You start with shredded chicken cooked in the slow cooker; either cook it that day or cook ahead and freeze.  Then serve the chicken over rice with tomatoes (or salsa), cheese, tortilla chips and avocado cream sauce.  If avocado is not your thing, Karen also gives a recipe for Tomatillo Dressing that you can serve over this.
