Today it's supposed to get above 90F in Utah, and when the weather gets that hot, something like this White Bean and Garlic Hummus from 365 Days of Slow Cooking is just what I'd want for a Meatless Monday lunch or dinner.  This recipe starts with dried beans that cook all day in the slow cooker, so it's not only economical and easy, but it's also vegan.  For a gluten-free option, serve with veggies like celery, carrots, red pepper strips, and sugar snap peas for dippers.
