Slow Cooker Corn on the Cob from A Year of Slow Cooking

Here's a lovely side dish idea for our Slow Cooker Summer Dinners.  This CrockPot Corn on the Cob from A Year of Slow Cooking is something you might want to make when it's so hot that even the thought of boiling water for the few minutes it takes to cook corn sounds like it will just heat up the kitchen.  Using this easy method, you cook the corn (wrapped in foil) in the slow cooker in about two hours, and during that time you can sit in the shade and read a book, with a tall glass of something cool in hand.  Stephanie didn't do this, but I might be tempted to spread butter over each ear of corn before you wrap it in foil, for corn cooked in butter!

After 1hr in the crock pot on high, some of the corn was not even hot. I then divided the corn between 2 pots, but still had to put it in the oven for 1/2 hr at 350. Won't try again!

Pam, thanks for the feedback. I notice Stephanie cooked for 2 hours on high and she said her corn had a little crunch, so maybe her slow cooker is a lot hotter. Sorry it didn't work for you.
