I haven't tried using my slow cooker to cook eggs yet, but I'm intrigued by the idea of it, and this Slow Cooker Spinach, Tomato, and Mozzarella Frittata from Slow Cooker Queen looks delicious and easy to make.  Chrissie serves the frittata with a salad for a light summer dinner, but to me this looks like a great Meatless Monday recipe for any time of day.  I also like the idea that the finished frittata can be served warm or cold, making it even more appealing for a Slow Cooker Summer Dinner.  This just went on my "to-try" list; hope you enjoy as well.
