If you've been paying attention while I've shared Slow Cooker Summer Dinners the last few months, it's pretty obvious that I think tacos are one of the best ideas ever for a summer dinner from the slow cooker.  Not only is cooked-all-day shredded meat so tasty inside a taco shell, but cooling toppings like lettuce, cabbage, avocado, salsa, or fruit make tacos extra-appealing for a summer meal.

So far we've have Slow Cooker Chicken Tacos and Slow Cooker Beef Tacos so I couldn't let summer come to an end without giving pork tacos their share of the attention.  Shredded pork is classic in tacos; hope you enjoy these recipes!
