Taco filling made in the slow cooker is such a perfect idea for a Slow Cooker Summer Dinner, and this Slow Cooker Vegan Lentil Quinoa Taco Filling from Healthy Slow Cooking sounds like the start of a perfect Meatless Monday dinner.  This recipe is from the new cookbook Vegan Slow Cooking for Two or Just for You, and when blogger and cookbook author Kathy Hester spotlighted recipes from her new book on her blog, she generously agreed to let me share a few of them here too.  This book features vegan slow cooker recipes using a smaller slow cooker size, but if you wanted to double the recipe and use a regular size slow cooker, I'm sure Kathy wouldn't mind a bit!

  1. What a great idea to write recipes for the smaller slow cooker sizes. I have a 3-quart cooker that is perfect for the times when I just want to cook for my husband and me. Ordering the book now!

  2. Lydia, all the recipes I've seen from the book look good so far, and there are a couple of other recipes from Kathy on here, so I think you will like the book!
