Roasted Beets (Beetroot) in the Slow Cooker, and Lentil Salad with Beets and Feta from On Top of Spaghetti

It was perfect timing; just when I was thinking it was time for a Meatless Monday slow cooker recipe, I got this recipe for Slow Cooker Roasted Beets and Lentil Salad with Beets and Feta from On Top of Spaghetti in my inbox.  I'd never heard of roasting beets in the slow cooker, but I loved the idea, and just to make it even more interesting, Eleni shares a recipe to transform the roasted beets into a delicious-sounding lentil salad.  I love all those ingredients, so this sounds like a perfect meatless dinner to me!
