Slow Cooker Salsa Chicken with Lime and Melted Mozzarella from Kalyn's Kitchen

It took three tries to perfect this dish so I had the moist chicken with spicy salsa flavor, topped with gooey melted cheese that I wanted.  In the final version the chicken is cooked in the slow cooker with salsa that was reduced so it wouldn't get watery; then the tender salsa-flavored chicken is topped with cheese and put under the broiler for a few minutes.  It was worth all the experiments, because this Slow Cooker Salsa Chicken with Lime and Melted Mozzarella from Kalyn's Kitchen is a complete keeper!  This is a good one to try when you only have a few hours, but you'd like the convenience of not having to watch dinner while it's in the slow cooker.
