As soon as I read through the list of Asian seasonings that make up the braising liquid for this Slow Cooker Soy-Braised Chicken from The Perfect Pantry, I understood why Lydia regretted not making a bigger batch! If you have a big six quart slow cooker, please use it and double this recipe.  Than when the skinless-boneless chicken thighs have simmered until the chicken is falling-apart tender, you can serve the soy-braised chicken over rice, inside lettuce wraps, or even wrapped in a tortilla.  Trust Lydia; she says you will definitely not regret making a double batch of this tasty chicken!

Ingredients for this CrockPot Recipe:
Low-sodium chicken stock, dark soy sauce, Shao Hsing wine, garlic, vinegar, brown sugar, ginger root, orange zest, fresh-ground black pepper, star anise, cayenne pepper or dried red chile, boneless and skinless chicken thighs, arrowroot or cornstarch.  For serving: cooked white or brown rice, sliced scallions for garnish (optional).

I made this over the weekend, but I was short on chicken thighs, so I added some carrots & onions to the crock pot. It is marvelous!
