Crock Pot Creamy Tomato Soup from Skinnytaste

Crock Pot Creamy Tomato Soup doesn't really have cream, but it sounds delicious!

This recipe for Crock Pot Creamy Tomato Soup from Skinnytaste starts with finely diced celery, onions, and carrots that are sauteed on the stove for a few minutes and then simmered all day in the slow cooker with canned whole tomatoes, chicken or vegetable stock, fresh thyme, fresh basil, and a Parmesan rind or two if you have some. 

After it's cooked for 6 hours on low the soup is pureed, thickened with milk, flour, and butter and flavored with freshly-grated Parmesan.  I love all those flavors, and this sounds like a delicious Meatless Monday lunch or dinner to me!
