This recipe for Crock Pot Creamy Tomato Soup from Skinnytaste starts with finely diced celery, onions, and carrots that are sauteed on the stove for a few minutes and then simmered all day in the slow cooker with canned whole tomatoes, chicken or vegetable stock, fresh thyme, fresh basil, and a Parmesan rind or two if you have some.  After it's cooked for 6 hours on low the soup is pureed, thickened with milk, flour, and butter and flavored with freshly-grated Parmesan.  I love all those flavors, and this sounds like a delicious Meatless Monday lunch or dinner to me!
