Slow Cooker Jamaican Pumpkin Soup from A Year of Slow Cooking

Jamaican Pumpkin Soup

If you've visited any food site on the internet recently, you have to realize we're right in the middle of pumpkin season.  Pumpkin lovers wait all year for this frenzy of pumpkin recipes, and Pumpkin Soup is certainly a classic way to use this beloved squash.  I'm not such a fan of sweet pumpkin recipes, but I love the sound of this Slow Cooker Jamaican Pumpkin Soup from A Year of Slow Cooking that has fresh or canned pumpkin, vegetable broth, red onion, celery, yams, garlic, and ginger, plus some interesting spices like allspice, nutmeg, and turmeric.  And truthfully it was the turmeric that sealed the deal for me; I love that flavor.  Stephanie says she stirred just a minimal amount of cream into each serving of soup to keep the fat content low, or you can also eat it without cream for a Vegan soup for Meatless Monday!
