I'm a huge fan of butternut squash, but I never got too excited about butternut squash soup until I tried this Slow Cooker Thai-Inspired Butternut Squash and Peanut Soup with Red Bell Pepper, Lime, and Cilantro.  This recipe from Kalyn's Kitchen has the kind of flavors that I think make Thai food so appealing, and I'd love this soup for a Meatless Monday dinner!

Ingredients for this recipe:
  • peeled and cubed butternut squash
  • vegetable stock
  • salt
  • pepper
  • olive oil
  • onion
  • garlic
  • ginger root
  • red bell pepper
  • coconut milk
  • Thai Red Curry Paste
  • natural peanut butter
  • sweetener of your choice
  • fish sauce (or "vegan fish sauce" or soy sauce)
  • lime juice
  • cilantro
  • chopped peanuts
  • Sriracha Sauce for serving, if desired
