Slow Cooker Lemony Turkey Soup with Orzo and Spinach from Kalyn's Kitchen

Slow Cooker Lemony Turkey Soup with Spinach and Orzo

Normally when I share a new slow cooker recipe on Kalyn's Kitchen I wait a few months before I feature that recipe here, but since Thanksgiving is this week and this Slow Cooker Lemony Turkey Soup with Spinach and Orzo was so, so good, it just cut to the front of the line.  I shared this delicious soup with my sister Pam and her family, and they all prounounced it to be a keeper; hope you enjoy!

Ingredients for this recipe: 
Homemade chicken or turkey stock (or canned low-sodium chicken broth), poultry seasoning, dried thyme, black pepper, Penzey's turkey soup base (optional), chopped onion, chopped celery, chopped carrots, whole wheat orzo, diced cooked turkey (or chicken), spinach, fresh-squeezed lemon juice
8 cups homemade turkey stock (or homemade chicken stock or low sodium chicken broth in a can)
1 tsp. poultry seasoning
1/2 tsp. dried thyme
fresh-ground black pepper to taste
1 T Penzeys or Better than Bouillon Turkey Soup Base, optional (The soup base is fairly salty so it's important to use low-sodium stock if you're using it.)
1 1/2 cups chopped onion (chopped small)
1 1/2 cups chopped celery (chopped small)
1 1/2 cups chopped carrots, preferably organic carrots that don't need to be peeled (chopped small)
1/2 cup whole wheat orzo
3-4 cups diced cooked turkey or chicken (cut a little larger than the vegetables)
2-3 large handfuls spinach leaves (about 3 oz.)
2 T fresh-squeezed lemon juice (I used my fresh-frozen lemon juice) - See more at:

I'm not making turkey this year, so no leftovers -- but I'm going to use a rotisserie turkey breast from the market to make this soup.
