I'm the unofficial president of the Lentils Fan Club, so whenever I see a recipe with lentils of any type, it always catches my eye. This recipe for Slow Cooker Lentil Cauliflower Stew from The Shiksa in the Kitchen has a whole pound of lentils with other healthful veggies and greens. I love the idea of serving it with a dollop of Greek Yogurt, sour cream, or goat cheese, but you can also skip that for a vegan recipe. Either way, I think this sounds great for Meatless Monday!
