I still have a few more Slow Cooker Thanksgiving Ideas coming up, but I'm taking a break from Thanksgiving recipes to share this Slow Cooker Vegan White Bean Soup from Budget Bytes, which I think sounds perfect for a Meatless Monday dinner.  Beth says this makes a lot, so put some in the freezer and you'll have a quick lunch or dinner for later.

Olive oil, garlic, onion, carrots, celery, dry navy beans, bay leaf, dried rosemary, dried thyme, smoked paprika, freshly cracked pepper, salt
