Slow Cooker Potato Soup from Eat at Home

Warm and comforting potato soup from the slow cooker, just like mother used to make!

If I was allowed to change the recipe title for this Slow Cooker Potato Soup from Eat at Home, I'd rename it "Potato Soup Like Mother Used to Make."  I grew up on this kind of tasty soup that starts with real potatoes, and gets topped with a little bit of bacon and cheese.  You can also omit the bacon and use vegetable stock if you prefer and make this a Meatless Monday soup.  Sounds delicious either way to me!

Ingredients for this recipe:
  • Potatoes
  • butter
  • chicken broth
  • water
  • salt and pepper
  • evaporated milk
  • optional toppings such as bacon, cheese, and chives.

  1. Oh, how I wish *my* mother would have made soup like this! I've not yet tried a potato soup in the slow cooker, so this recipe is going on my to-do list.

  2. Lydia, I remember this as a favorite dinner when I was a kid. Of course I was always trying to get more bacon and cheese. Sometimes my mom put the bacon right in the soup, probably to ration it out equally in our big family!
