Slow Cooker Thai Chicken Soup from FoodieCrush

This Slow Cooker Thai Chicken Soup is quick to prep and sounds amazing.  (Photo from Foodie Crush.)

When I spotted this recipe for Slow Cooker Thai Chicken Soup from my friend Heidi at FoodieCrush, she had me at Thai Chicken Soup.  But just in case I needed any more convincing about trying the recipe, Heidi shared that this recipe cooks entirely in the slow cooker; just a little chopping to prep the ingredients and before you know it, your dinner is cooking away.  So if you're someone who doesn't like to cook before you put the food into the slow cooker (you know who you are) this recipe is for you!

Ingredients for this recipe:
Red curry paste, canned coconut milk, chicken stock, fish sauce, brown sugar, peanut butter, chicken breasts, red bell pepper, onion, minced fresh ginger, frozen peas, lime juice, cilantro, cooked white rice for serving.
