This African-Inspired Vegan Slow Cooker Soup with Peanut Butter, Chiles, Brown Rice, and Lentils is something I've been making for years, and when I moved to a new house in March, this was one of the first soups I made at the new place. I love the creamy peanut butter flavor in a soup that has a lot of nutritional value from the lentils, brown rice, red bell pepper, and tomatoes. This soup is much too good to only serve for Meatless Monday, but if you're looking for a vegetarian or vegan option for that day, this is a perfect choice!

Onion, green onion, red bell peppers, minced garlic, diced tomatoes, vegetable stock, ground cumin, Ancho chile powder, New Mexico chile powder, Aleppo pepper (or other types of chile powder and hot pepper), brown lentils, brown rice, peanut butter
