I'm focusing on healthier slow cooker recipes for the month of January, and when I spotted this delicious looking Slow Cooker Italian Meatloaf from It's Yummi on Pinterest and then discovered it was a Low-Carb recipe that uses zucchini to bind the meatloaf together, I wrote the blogger immediately for permission to feature it. The recipe uses foil strips laid into the slow cooker before the meatloaf goes in to help lift it out more easily, which is a trick I'm going to have to try myself!
Ingredients for this recipe:
Olive oil, extra lean ground sirloin or bison, eggs, grated zucchini, grated Parmesan cheese, chopped parsley, minced garlic, balsamic vinegar, dried oregano, dried onion or onion powder, salt and pepper, ketchup or tomato sauce, shredded or sliced Mozzarella cheese.
