It's the first day of a brand new year, and people everywhere are taking vows to stop the holiday indulging and get back on track with a healthy eating plan.  My main food blog is focused on ideas for healthy eating, and for the month of January I'm going to focus on sharing healthy slow cooker recipes on this site.  I'm starting out with this Slow Cooker Frittata with Kale, Roasted Red Pepper, and Feta from Kalyn's kitchen, and throughout the month I'll be including recipes suitable for the South Beach Diet or other low-carb eating plans, Weight Watchers, Paleo diets, vegetarian and vegan diets.  Hope you'll find something during the month that will be a home run for your personal way of eating healthy, and Happy New Year Everyone!

Olive oil, baby kale, roasted red peppers, green onion, crumbled feta, eggs, Spike Seasoning or other all-purpose seasoning blend, fresh ground black pepper to taste, low-fat sour cream for serving (optional).
