It's the time of year when you want lighter fare, but many people still need to cook something the family will eat.  This Super Easy Skinny Veggie CrockPot Lasagna from Pinch of Yum is not only easy to get into the slow cooker, but it's family friendly and loaded with healthy goodness from the generous amount of chopped kale that's layered between the noodles and sauce.

The recipe also has a minimal amount of low-fat cheese and the proportion of vegetables to other ingredients is high.  Lindsay uses sauce from a jar, but you can definitely use your own homemade sauce as well.  This just went on my personal must-try list!

Ingredients for this recipe:
  • Italian tomato sauce (from a jar or can or use homemade sauce
  • lasagna noodles
  • part skim ricotta or cottage cheese
  • chopped vegetables of your choice
  • shredded Mozzarella or Provolone cheese
  • Parmesan cheese
  • parsley for garnish
