Slow Cooker Vegan Black Bean and Sweet Potato Stew from The Perfect Pantry

Olive oil, finely chopped onions, minced fresh ginger root, chili powder, ground cumin, red skinned sweet potatoes, orange juice, garlic, canned black beans, Chipotle chiles in adobo, red bell pepper, salt and pepper to taste, optional toppings like sour cream, diced avocado, orange wedges, or lime wedges.
