Veggie-Packed Slow Cooker Black Bean Soup from Amuse Your Bouche

I probably don't need to remind you that there's a big chocolate-eating day coming up later this week, and on a day like that even the healthiest eaters are probably going to indulge a bit.  That's why I'm  suggesting you start out the week with a healthy Meatless Monday dinner like this Veggie-Packed Slow Cooker Black Bean Soup from Amuse Your Bouche.  Even if you include the optional cheese and sour cream when you serve it, this soup has vegetables galore, and it sounds like a delicious way to start out the week.

Ingredients for this recipe:
  • Carrots
  • minced garlic
  • finely diced red pepper
  • chopped spinach
  • canned black beans
  • canned diced tomatoes
  • canned refried beans
  • smoked paprika
  • hot chilli powder
  • water
  • salt
  • black pepper
  • optional toppings such as fresh coriander/cilantro, grated cheese, crumbled tortilla chips, sour cream.)
