My father was a huge fan of traditional Mexican Pozole, a stew that's usually made with pork, hominy, tomatillos, and green chiles. But it was the green chile flavor and the hominy that made dad love Pozole so much, and I think he would have been happy with a serving of this Slow Cooker Vegetarian Pozole from Slender Kitchen.
