Slow Cooker Vegetarian Pozole from Slender Kitchen (Vegan)

Slow Cooker Vegetarian Pozole for Meatless Monday!

My father was a huge fan of traditional Mexican Pozole, a stew that's usually made with pork, hominy, tomatillos, and green chiles.  But it was the green chile flavor and the hominy that made dad love Pozole so much, and I think he would have been happy with a serving of this Slow Cooker Vegetarian Pozole from Slender Kitchen.  I love all the suggestions for garnishing this vegan soup; make this one now for Meatless Monday before the weather gets too hot for soup! 

Ingredients for this recipe:
  • Vegetable broth
  • Poblano peppers
  • Jalapenos
  • tomatillos
  • salt and pepper
  • garlic
  • cooking spray
  • dried oregano
  • hominy
  • zucchini
  • Optional garnishes:  Shredded cabbage, radishes, Queso Fresco, corn tortillas, avocado, lime, chopped onion, chopped Jalapenos.
