Slow Cooker Vegetarian Quinoa Mexican Bowl with Creamy Avocado Sauce

I promised slow cooker ideas for Cinco de Mayo, so I started with Slow Cooker Southwestern Beef Brisket for the carnivores and now it's time for a meatless slow cooker dish with Mexican flavors.  I'm a big quinoa fan, so this Slow Cooker Vegetarian Quinoa Mexican Bowl with Creamy Avocado Sauce from 365 Days of Slow Cooking sounds like a perfect dish for Cinco de Mayo to me.  And this year that Mexican-food holiday does fall on a Monday, so this could be a great Meatless Monday option to help you celebrate.

Ingredients for this recipe: 
Quinoa Bowl:  quinoa, water, vegetarian bouillon, (or use vegetable broth), diced onion, canned diced green chiles, diced red bell pepper, garlic, canned black beans, salt and papper.  Avocado Sauce:  Ripe avocado, garlic, olive oil, fresh lime juice, minced cilantro, diced tomatoes, sea salt, black pepper.
