Slow Cooker Kalua Pork Tacos from Everyday Southwest (and Slow Cooker Summer Dinners!)

Memorial Day is the unofficial start of summer, and again this year I'm going to be featuring Slow Cooker Summer Dinners all summer long, so you'll have plenty of good ideas for crockpot meals that help you make a good dinner without heating up the house.  What I'm calling Slow Cooker Summer Dinners are often things like these Slow Cooker Kalua Pork Tacos from Everyday Southwest, where the food that was cooked in the slow cooker is served warm, but the tortillas, pineapple, red pepper, and slaw still make it a summer meal.  Summer dinners also featuring cooling foods like avocados, tomatoes, cucumbers, and of course slow cooker salads.  Personally I use my crockpot just as much in the summer as I do in the winter; hope you enjoy the ideas that are coming up.  

Ingredients for this recipe:
  • Boneless pork shoulder
  • salt
  • Liquid Smoke
  • pineapple
  • red bell pepper
  • jalapeno
  • red onion
  • cilantro
  • barbecue sauce (homemade or from a jar)
  • For serving: corn tortillas, cole slaw, lime wedges, jalapeno or serrano chile.
