I'm a huge fan of beans in the slow cooker, and this Slow Cooker Vegan White Bean Vegetable Stew from Cafe Johnsonia also has greens, one of my other favorite slow cooker ingredients. This recipe starts with dried white beans and Lindsey from Cafe Johnsonia does know a thing or two about cooking dried beans in the slow cooker. I think starting with dried beans is especially good for a stew like this, where the cooking liquid adds to the flavor of the finished dish. This recipe uses a large slow cooker and makes a lot, but would be great to pull out of the freezer on one of those cold spring nights.

- bay leaf
- dried rosemary
- dried thyme
- dried oregano
- ground black pepper
- diced tomatoes
- chopped leafy greens
- For serving: rice, polenta, or bread.
