I'm becoming a big fan of egg dishes in the slow cooker, but what surprised me about this CrockPot Quinoa Breakfast Casserole with Tomato and Spinach from Crockpot Gourmet was the addition or uncooked quinoa to the egg mixture, and I'm really intrigued by this idea.
