I'm becoming a big fan of egg dishes in the slow cooker, but what surprised me about this CrockPot Quinoa Breakfast Casserole with Tomato and Spinach from Crockpot Gourmet was the addition or uncooked quinoa to the egg mixture, and I'm really intrigued by this idea.  Jennifer says the quinoa sinks to the bottom and forms kind of a crust, and I think this sounds lovely for breakfast, or for a Meatless Monday lunch or dinner.

Ingredients for this CrockPot Recipe:
Rinsed uncooked quinoa, milk, eggs, salt and pepper, frozen cut leaf spinach or fresh spinach, grape tomatoes, shredded Colby, Monterey Jack, or Cheddar cheese, Parmesan cheese.

  1. Now I'm intrigued, too. I've never cooked eggs with quinoa, and I can't imagine why not. But the idea of the quinoa forming a crust really appeals to me.
