It's hot outside, but luckily the flank steak for these Slow Cooker Chipotle Steak Quesadillas from Bev Cooks can cook entirely in the slow cooker, keeping the house cool and infusing the meat with wonderful flavors while it gets nice and tender.  Then make that delicious meat into quesadillas with cheese, red peppers, and cilantro and serve with a generous amount of cooling avocado for a perfect Slow Cooker Summer Dinner!

  • Flank steak
  • canned Chipotle peppers
  • Adobo sauce (from the canned peppers)
  • scallions
  • cilantro
  • lime
  • salsa
  • red bell pepper
  • Mexi-blend cheese
  • multigrain tortillas
  • avocado 
  • salt and fresh ground black pepper.
