I'm home from BlogHer14 and busy writing posts for both my blogs so I can leave you something interesting when I go off again in a few days (on a cruise to Alaska!)  I spotted these Garlicky Lamb Greek Tacos on Foodie with Family and Rebecca made them as an idea for Superbowl parties, but personally I think this would make an amazing Slow Cooker Summer Dinner as well.  Lamb roast cooks in the slow cooker without heating up your house until it's fall-apart tender, and the tacos are served with cooling additions like Greek yogurt, cucumber, peppers, spinach, olives, and Feta Cheese.  Doesn't that sound amazing!

Ingredients for this CrockPot Recipe:
  • Boneless leg of lamb
  • lemon
  • garlic
  • olive oil
  • dry oregano
  • salt, fresh-ground black pepper
  • Greek yogurt
  • cucumber
  • lemon
  • onion
  • fresh dill weed
  • garlic
  • baby spinach
  • Kalamata olives
  • bell pepper
  • Feta cheese
  • flour tortillas.
