Slow Cooker Smothered Sweet Pork Burritos from Mel's Kitchen Cafe

Mel's Kitchen Cafe has a new take on sweet pork burritos, and they sound delicious!

As soon as I say Sweet Pork Burritos you probably think of Cafe Rio, especially if you live in Utah.  But Mel makes it clear that these Slow Cooker Smothered Sweet Pork Burritos from Mel's Kitchen Cafe are different from Cafe Rio's sweet pork.  But she adds that these burritos are also "very, very amazing," and they certainly look amazing to me. 

This recipe cooks the pork in the slow cooker all day; then you shred the meat and add other seasonings, assemble the burritos with Cilantro Lime Rice (recipe included), cover with sauce and cheese in a casserole dish, and bake for a few minutes.  Sounds like a must-try dinner to me!

Ingredients for this CrockPot Recipe:
  • Pork roast
  • salt and pepper
  • oil
  • Liquid Smoke
  • water
  • brown sugar
  • canned green enchilada sauce
  • chili powder
  • hot sauce
  • canned black beans
  • Grated Jack or Cheddar cheese
  • burrito sized white or whole wheat tortillas
  • For the Rice: Butter, long-grain white rice, low-sodium chicken broth, salt, pepper, lime zest and juice, cilantro, cumin.
