For everyone who wants a soup with lots of complex flavors but simple preparation, this Easy Slow Cooker Thai Chicken Curry Soup from Eat at Home will fit the bill. You can cook the bone-in-chicken, vegetables, curry powder, and stock all day while you're at work if you use the low setting; then finish the soup when you get home with the shredded chicken meat, rice, and coconut milk to cook a little longer. This is not an authentic Thai recipe, but it sounds delicious to me!
