Sometimes with slow cooker food you just have to ignore the looks and concentrate on the flavor. I was reminded of that recently when I did a round-up of my favorite recipes with Italian Sausage on my main site, and a reader named Ellen reminded me of this Slow Cooker Chickpea Stew with Italian Sausage, Tomatoes, and Pesto. Ellen said this is her favorite of my many recipes using Italian sausage, and it made me remember how delicious this recipe really is, even though it's definitely not going to win any beauty contests.
This recipe is has amazing flavors because of the way the canned garbanzo beans cook all day with the onion, garlic, spices, tomatoes, and spicy Italian sausage, and then stirring some basil pesto at the end just takes it over the top into complete deliciousness.
I know some people aren't chickpea fans, so if they're a non-starter at your house I'd use canned Cannellini beans for this delicious stew, but please try it no matter what kind of beans you use!

- olive oil
- turkey Italian sausage, hot or milk
- chopped onion
- minced garlic
- ground fennel
- Italian herb blend
- canned chickpeas (garbanzo beans)
- canned diced tomatoes
- canned crushed tomatoes
- basil pesto
- salt and fresh-ground black pepper
- freshly-grated Parmesan for serving (optional)

Recommended Slow Cooker Size:
I used my six-quart Ninja Cooker for this recipe, but any 4-5 quart slow cooker will also work.
