I have to admit that when I spotted this Asian Slow Cooker Pork Roast from Taste and Tell, my first thought was "school night dinner." And though it might be too soon to be thinking about Back-to-School recipes for some people, where I live the year-round schools are already in session. Yikes.
There were two things that made me think of this for a week-night dinner. First, the pork goes into the slow cooker without browning. Second, you can start this after lunch, cook on high for a few hours, and it will be ready in time for dinner. If I was a busy mom, I couldn't imagine getting a recipe in the slow cooker early in the morning, and not having to brown the pork makes is quick to throw together.
Deborah serves this over rice for a delicious-sounding meal, but I bet you can eat this tasty Asian pork inside lettuce or over a salad, which would make it a great Slow Cooker Summer Dinner as well.
