This ugly-but-delicious Slow Cooker Cannellini Bean Stew is one of my favorites!

There is certainly nothing beautiful or glamorous about this Slow Cooker Cannellini Bean Stew with Tomatoes, Italian Sausage, and Kale from Kalyn’s Kitchen, but this recipe is so delicious and comforting that I’ve made it many times since I first posted the recipe in 2009. I use hot turkey Italian Sausage to give it a little kick, and love to eat it with plenty of freshly-grated Parmesan cheese on top. The soup freezes well, so if you have a big slow cooker I’d double the recipe!
Ingredients for this Crock Pot Recipe:
- Hot turkey Italian sausage
- olive oil
- canned petite dice tomatoes
- canned Cannellini beans
- garlic, dried basil
- dried oregano
- ground fennel
- chicken stock
- chopped kale
- For serving: freshly-grated Parmesan cheese.
