I first saved Lydia’s idea for Slow Cooker Greek Chicken Roll-Ups with Tomatoes, Olives, and Feta Cheese to feature as a Slow Cooker Summer Dinner, and if it’s still hot where you live I think this would make a delicious warm-weather meal. But now that it’s back-to-school time I’m thinking this would also be a delicious option for a school-night dinner.
