This Spinach and Feta Lasagna sounds delicious, and it’s made in the slow cooker! Katerina used a large oval slow cooker, but this would be perfect for the Crock-Pot Casserole Crock Slow Cooker!

Here’s how Katerina from Diethood describes the recipe: “Layers of spinach, feta and light ricotta nestled between sheets of lasagna noodles. The easiest Lasagna you will ever make! Just throw all the ingredients in the Crock Pot and walk away.” Doesn’t that sound amazing? And lasagna is the perfect cold-weather comfort food, just in case it’s cold and dreary where you are. You’re welcome!
I have a recipe collection for Slow Cooker Lasagna on this site, and I’ll definitely be adding this Spinach and Feta Crock Pot Lasagna from Diethood to that post, but I decided that this slow cooker lasagna recipe sounds like such a total WOW that I had to give it a post by itself as well. I love the sound of vegetarian lasagna with Greek flavors, and this recipe has so many of my favorite ingredients.
