This Vegan Thai Salad features tofu that’s cooked all day in the slow cooker!

I like tofu, but I’ve never cooked it in the slow cooker so I was intrigued when I found this Vegan Thai Salad with Slow Cooked Tofu in Pineapple Barbecue Sauce from Fat Free Vegan Kitchen. You’ll have to plan ahead a bit, because the tofu is frozen and then thawed to change the texture and make it absorb the barbecue sauce better when it’s cooked. But everything about this recipe sounds good to me, including the way Susan uses pineapple to sweeten the barbecue sauce to avoid refined sugar.
