I’m a big fan of Swiss Chard so when I see it in a recipe it always gets my attention. This Chard, Lentil, and Potato Slow Cooker Soup from Oh My Veggies has a generous amount of chard, plus lentils and Yukon gold potatoes to add lots of interesting texture to the soup. Kiersten adapted this recipe from her favorite slow cooker cookbook and she says, “It’s not super fancy, it’s not a show-stopper, but it’s a delicious, hearty soup for a chilly fall evening.” Doesn’t that sound perfect for this time of year?
