I was already drooling over the photo of these Crockpot Chalupas from Pinch of Yum, and then I read the introduction where Lindsay says, “You just can’t argue with spicy, flavorful, tender shredded pork and pinto bean filling that cooks itself for you all day while you’re at work.” I certainly wouldn’t argue with that, no way. And serving the mixture on toasted tortillas with cheese makes it even better. This recipe has a lot of comments from people who have enjoyed it; sounds like a winner!
Ingredients for this CrockPot Recipe:
- Pork shoulder
- dry pinto beans
- light beer
- canned fire roasted tomatoes
- minced garlic
- jalapeno peppers
- chili powder
- cayenne pepper
- taco seasoning (optional)
- shredded mozzarella
- flour tortillas.
