It’s a new year and to welcome 2021 I’m starting a new feature here on Wednesday! I think most people know that my main blogging gig is sharing carb-conscious recipes on Kalyn’s Kitchen. On Wednesdays I am going to start sharing slow cooker and Instant Pot recipes from Kalyn’s Kitchen. That’s something I used to do years ago, and you can find the previously featured ones listed in a category called From Kalyn’s Kitchen.

What ingredients do you need for Instant Pot Green Chile Turkey Enchilada Soup?
- lean ground turkey
- olive oil
- onion,
- red bell pepper
- ground Ancho Chile Pepper
- ground Cumin
- Mexican Oregano (see notes)
- canned Black Beans, rinsed and drained (optional)
- Hatch Green Chile Enchilada Sauce
- canned diced green chiles
- canned chicken broth
- frozen cauliflower rice
- grated Monterey Jack or Mozzarella for serving (optional)
- Green Tabasco Sauce for serving (optional)
Why is this recipe a favorite for me?
This is a soup recipe that came about because of my love for Hatch Green Chile Enchilada Sauce (affiliate link)! That’s a canned sauce I love to use to add spicy goodness to recipes. In fact, I like it so much I’ve featured as one of my Kalyn’s Kitchen Picks, where I spotlight products I buy over and over. The soup has those spicy Mexican flavors I love so much, and you can make it with a combination of beans and cauliflower rice (for 13 net carbs per serving) or skip the beans and use more cauliflower rice (for 9.5 net carbs per servings. And as you can tell, I enjoy this soup with plenty of grated cheese added at the table, and I wouldn’t mind some sour cream on it either!
