Green Chile Pork Enchiladas on Kalyn’s Kitchen!
I always love having an occasion to eat Mexican food, which is why I’m happy when Cinco de Mayo comes around! And even though I know it’s not really an authentic Mexican holiday, I still think it’s a good reason to have an amazing Mexican dinner. And if you want a comfort dinner to celebrate the occasion, these Instant Pot Green Chile Pork Enchiladas from Kalyn’s Kitchen are absolutely a winner! We used low-carb tortillas to make it lower in net carbs, but use any tortillas you prefer for this tasty meal!
This recipe is a bit more work than some of my Instant Pot recipes, but I promise you’re going to love the results. Cook the pork in the Instant Pot with green chile salsa, assemble enchiladas, cover with sauce and cheese, and bake for an enchilada dinner that green chile pork fans will devour!

I’m a huge fan of the Herdez Salsa Verde (affiliate link) we used in this recipe and I think it gives that just-spicy-enough flavor that makes green chile pork so tasty. And of course, who doesn’t love enchiladas covered with melted cheese?
