This Instant Pot Ham and Cabbage Soup from Kalyn’s Kitchen is a healthy diet-friendly soup you can make in your Instant Pot in less than an hour from start to finish. With cabbage, onion, red bell pepper, chopped ham, and a few carrots this is a very low-carb soup. The carrots do add some nice color but you could certainly use less carrots if you prefer lower carb.
Add a few spices and seasonings to the pot along with the ham and vegetables. Lock the lid, set the time, and the Instant Pot takes over and does the cooking for you! In about 30 minutes you have delicious hot soup ready for your table! Serve hot with some freshly grated Parmesan cheese on top if desired for a yummy low-carb meal.

- cabbage
- onion
- red bell pepper
- carrots
- ham
- bay leaves
- Spike Seasoning (or other all purpose seasoning mix)
