There’s lots of talk about Slow Cooker or Instant Pot going on right now, and this Green Chile Pork Taco Bowl is one that could be cooked either way and was really a winner!
The recipe uses inexpensive pork sirloin roast; you might have seen them in the four-packs at Costco. Using a purchased Green Chile Tomatillo Salsa as the cooking sauce made this extra easy, and the flavor was great with the pork. Use Easy Cauliflower Rice as the base of the bowl to keep it low in carbs, but you could just use rice if you’re not watching carbs.
This tasty green chile pork could also be served in tacos, burritos, or on a salad. Either way you cook it or no matter how you serve it, I bet this will be a hit with your family!
Ingredients for Green Chile Pork Taco Bowl:
- pork sirloin roast
- ground cumin
- garlic powder
- salt / fresh ground black pepper
- olive oil
- Green Chile Tomatillo Salsa
- Best Easy Cauliflower Rice
- For serving, limes, grated Mexican Blend cheese, sour cream, other taco toppings as desired.
