I’m focusing on healthier slow cooker recipes for the month of January, and when I spotted this delicious looking Low-Carb Slow Cooker Italian Meatloaf from It’s Yummi on Pinterest and then discovered it was a Low-Carb recipe that uses zucchini to bind the meatloaf together, I wrote the blogger immediately for permission to feature it. The recipe uses foil strips laid into the slow cooker before the meatloaf goes in to help lift it out more easily, which is a trick I’m going to have to try myself!

Regina, I've never tried them but sounds like they'd be perfect for this.
They sell crock pot liners that are made by Reynolds, the same people who make foil. You can find them in the same isle. I get mine from Walmart or Target. They are plastic and you put them in your crock pot then put your food in and when it's done you can pull them out and throw away. So easy and great clean up.

Thanks for all the great recipes you share Kalyn. I have tried quite a few of your recipes and have not been disappointed. I have only recently started making meatloaf recipes in the slow cooker – talk about coming late to the party! Easy as it is, I have learned a few tricks to make it even easier. For example, I make up the recipe the night before I need it, storing the meat mix in a greased Pyrex loaf dish. The following day, I take it out of the fridge and put it straight into the slow cooker and cook on low for 8-9 hours, or whatever the recipe suggests. I never add water to the slow cooker. It works like a charm every time.
