There’s certainly nothing beautiful or glamorous about this Slow Cooker Cannellini Bean Stew with Sausage, and Kale from Kalyn’s Kitchen, but this recipe is so delicious and comforting that I’ve made it many times since I first posted the recipe in 2009. I use hot turkey Italian Sausage to give it a little kick, and love to eat it with plenty of freshly-grated Parmesan cheese on top. The soup freezes well, so if you have a big slow cooker I’d double the recipe!

Cannellini beans are a type of white kidney bean, but if you don’t have those use any type of white beans you’d like in this Slow Cooker Cannellini bean Stew. But don’t skip the flavorful Italian sausage and the grated Parmesan cheese on top!

Ingredients for Slow Cooker Cannellini Bean Stew with Sausage, and Kale:

  • Hot turkey Italian sausage
  • olive oil
  • canned petite dice tomatoes
  • canned Cannellini beans
  • garlic, dried basil
  • dried oregano
  • ground fennel
  • chicken stock
  • chopped kale
  • For serving:  freshly-grated Parmesan cheese.

It’s no secret that pork roast is perfect for the slow cooker, and in fact this simple 2-ingredient pork roast recipe has been popular on this site for a long time now. But if you like the idea of pork roast with a little more seasonings, I loved this Slow Cooker Bavarian Pork Roast when I tested the recipe.

There are a few seasonings you might not be that familiar with, but if you’re skeptical I’d  recommend just use slightly smaller amounts.  Of course if you skip the Bavarian seasonings and just make plain Pork Roast with Sour Cream Gravy, that’s going to be really delicious as well.

Ingredients for Slow Cooker Bavarian Pork Roast:

  • Pork sirloin tip roast
  • whole or ground caraway seed (probably optional but good)
  • dried marjoram
  • Penzey’s Pork Chop Seasoning (or other seasoning of your choice)
  • Vege-Sal (or salt)
  • olive oil
  • water
  • white wine vinegar
  • sour cream
  • cornstarch.

Slow Cooker Beef and Refried Bean Chili from Kalyn's Kitchen

 

In the United States we’re right in the middle of chili-eating season, and this Slow Cooker Beef and Refried Bean Chili from Kalyn’s Kitchen is definitely something I’d make for a Super Bowl Party, or just when the weather calls for chili. I love all the flavors here, but what really makes this chili special is the way it’s thickened with refried beans.

You can cook this all day on low if you’d like, but if you want chili a bit sooner, this is a chili recipe you can start mid-afternoon and have for dinner that night if you choose to cook on high. And if you’re a lime lover like I am, be sure to serve with extra limes to squeeze into the chili at the table!

For Friday Favorites we spotlight recipes from the past that you might have missed, and this Slow Cooker Vegetarian Cannellini Bean and Kale Soup is a hearty meatless soup that’s so tasty I’ve even made it for my annual NewYear’s Day soup party.

Of course Slow Cooker Vegetarian Cannellini Bean and Kale Soup isn’t going to win any beauty contests, but this was truly one of the most delicious meatless soups I’ve made in the slow cooker.  The soup starts with onions and garlic sauteed with Italian seasoning; then they’re added to the slow cooker with pureed Cannellini beans, kale, tomatoes, and chicken or vegetable stock.  And if you have a parmesan rind hanging out in the fridge, that will add extra savory goodness to this soup.

Ingredients for Slow Cooker Vegetarian Cannellini Bean and Kale Soup:

  • Olive oil
  • onions
  • garlic
  • dried Italian seasoning
  • canned Cannellini beans
  • canned petite diced tomatoes
  • chopped kale
  • chicken or vegetable stock
  • fresh sage leaves or dried sage
  • Parmesan rind (optional)
  • freshly shaved Parmesan for garnish (optional).

For Friday Favorites we spotlight past recipes that you may have missed, and this Mediterranean Beef Stew is hearty and delicious for this time of year. And absolutely, this Mediterranean Beef Stew is one of my favorite versions of beef stew, with so many of the Mediterranean flavors I love like olives, garlic, tomatoes, mushrooms, onions, rosemary, capers, and balsamic vinegar.

For best flavor in a recipe like Slow Cooker Mediterranean Beef Stew with Rosemary and Balsamic Vinegar, brown the meat and saute the mushrooms and onions before you put them in the slow cooker.  And if you do that the night before and keep the ingredients in the fridge overnight, you can cook this all day while you’re at work and come home to a great dinner.
