This Crockpot Anasazi Bean Soup is one of my all-time favorite slow cooker soup recipes! And this soup contains chopped cabbage, so it’s perfect to make during March when cabbage goes on sale everywhere in the U.S. In this tasty soup the beans are soaked overnight and then cook all day in the slow cooker with onions, celery, carrots, cabbage, and diced ham.
In Utah I can find Anasazi Beans at Whole Foods, and they’re also available online. But if you don’t see Anasazi Beans in your store, just make this tasty soup with another type of dried bean, no worries!
What are Anasazi Beans?
If you’re not familiar with Anasazi Beans, they’re a delightful speckled bean that turn pinkish-purple when they’re cooked. The beans were originally discovered in some ruins where the Anasazi Indian lived thousands of years ago, and scientists re-introduced this interesting bean! When I taught Utah history in fourth grade, I used to make this soup for an Anasazi Feast for the students, and it was always a hit!

- ham rind if available
- water (or use ham stock if you have some)
- Dried Parsley (affiliate link)
- Garlic Powder (affiliate link)

- fresh ground black pepper to taste
- Goya Ham Flavor Concentrate, optional but good (affiliate link)
- balsamic vinegar for serving, optional
Why is this recipe a favorite for me?
Partly it’s the fun memories of making this soup with my students that makes this recipe such a favorite for me. But Anasazi beans do have a delightful flavor, and they’re also less gas-producing than many other types of beans!
