(For Friday Favorites we spotlight past recipes that you may have missed, and this recipe using Anasazi beans is one of my all-time favorite slow cooker recipes!)
If you’re not familiar with Anasazi Beans, they’re a delightful speckled bean that turn pinkish-purple when they’re cooked. The beans were originally discovered in some ruins where the Anasazi Indian lived thousands of years ago, and scientists re-introduced this interesting bean! In this tasty Anasazi Bean and Cabbage Soup from Kalyn’s Kitchen the beans are soaked overnight and then they cook all day in the slow cooker with onions, celery, carrots, cabbage, and diced ham. When I taught Utah history in fourth grade, I used to make this soup for an Anasazi Feast for the students, and it was always a hit!
