I’m a huge fan of black-eyed peas, and I’m intrigued by the idea of a soup that uses them and has both ham and chicken. (And if you happen to have some leftover turkey, I bet that would work for this soup as well.) This soup starts with dried black-eyed peas that are soaked overnight, but Shirley says fresh or frozen ones can be used too.
And Black-Eyed Peas are good for luck in the new year, so don’t forget this soup when New Year’s Day arrives!
